Piece of Cake - Rich Fruit Cake

2020 is nearly over! Thank goodness! But, on the bright side its that festive time of year again when you can get away with indulgencing in seasonal delights... one last feast before them all important New Year Resolutions.

Here's a quick and easy Festive Fruit cake that works well for the base of a Christmas cake.


Rich Fruit Cake


1lb dried fruit ( sultanas, currants, apricots, raisins, dates)

10 floz of Yorkshire Tea (or any preference)

8 oz plain flour

5 1/2 oz butter

5 1/2 oz muscovado sugar

4 eggs

1 tbsp molasses

3 floz sherry ( I use Pedro Ximenez)

1 tsp grd nutmeg

2 tsp lemon juice

1 tsp baking powder

4 oz grd almonds

8 oz cherries

8 oz candied peel


Soak fruit in the tea overnight

Cream sugar and butter then add an egg at a time until incorporated (if it starts splitting just add some flour)

combine molasses, sherry, nutmeg and lemon juice and slowly drizzle into mix

fold in the flour and grd almonds


Put into desired moulds or even better disposable loaf tins so you can share with family and friends . 😍😍😍😍😍😍👌


Bake at 160c for 30 mins then 60c for 40mins
